Burrito Bowl

Tex-Mex classic, with a sneaky way to get some sneaky veggies in & increase plant based protein.

Super flexible recipe that works well midweek, and for the lunch the next day.

The mince mix

  1. 500g Packet of lean mince or plant based mince,

  2. Can of mixed beans- no sauce, mashed,

  3. Grated courgette,

  4. Diced onion

  5. Pepper chopped- top tip for fussy ones; put all the veggies in a blender with the canned tomatoes to be hidden,

  6. Can of chopped toms,

  7. Table spoon of tomato paste

  8. Spices - garlic, - chilli powder - smoked paprika - salt - pepper-

  9. 1/2 lime

How?

Soften the onion in a pan, with a drizzle of oil or butter.

When the onions are soft add your mince of choice.Gently stirring, avoiding boiling and burning.

Stir in your spices, veg & beans.

Once the veggies are soft, pour in your can of tomatoes, stir in your tomato paste.

Cook up and serve with freshly squeezed lime
